I have truly been surprised at making banana bread as most reviews I read about making BB were not only that it was a tricky process but that they didn’t like how it turned out… I have been fortunate enough for it to have worked every time and have every one who’s tried it LOVE IT.

Banana BreadINGREDIENTS: What I’m using is nothing fancy, and the method is SO simple.

  • 3 – 4 bananas mashed (make sure these bananas are brown/very spotty for more banana taste)
  • 2 eggs
  • 1 tsp of baking soda
  • 1/2 cup coconut flour
  • 2 tsp cinnamon

METHOD:

  1. Preheat oven on 250 – 300’C
  2. Mash banana together
  3. Add eggs and mix together
  4. Add all dry ingredients and stir well
  5. Pour in a baking tray (you may need to spray your baking paper or tray)
  6. Bake at 200’C for 45- 50 minutes

Every oven is different so the first time you make it check it every 10 minutes or so to ensure it hasn’t burnt. If you can tell it’s turning brown too fast, lower the heat – you will get the hang of this with practice!

NOTES:

I have also added nuts, oats (dries mixture out don’t add too much), blueberries, dark chocolate, shredded coconut.

Play around with ingredients but be careful that your ratio of dry to wet ingredients balance each other in some way. Otherwise too much dry ingredients makes it TOO dry and unpalatable and a lot of wet ingredients will fail to set the mixture.
